Potato Salad

8 large (or 10 medium) potatoes
1 cup mayonnaise
½ cup sour cream
2-4 tablespoons prepared mustard
¼ cup chopped celery
¼ cup chopped onion
2 teaspoons sweet relish
¼ pound bacon, cooked, drained, crumbled
1 teaspoon celery seed
salt to taste
pepper to taste
½ teaspoon garlic powder
3 hard boiled eggs, sliced
¼ cup chopped green onion tops
¼ teaspoon paprika

Peel potatoes and cut into large bite sized chunks. Boil potatoes until done. Do not over cook. Set aside and allow to cool. Add all other ingredients, except eggs, green onions, and paprika, and mix gently. (Some people like to mash their potato salad, which is perfectly okay.) Garnish top with sliced boiled eggs and green onions. Sprinkle lightly with paprika.
